Alora™ Hops - Pellets (USA)
Introducing Alora™, a new aroma hop variety from the Hopsteiner Breeding Program formerly known as HS17701. Alora™ is best known for her unique oil composition. Alora™ contains over 50% of unidentified total oil uncommon in hop chemistry, Selinene, a sesquiterpene rarely found in hops. This rare chemical trait found in Alora™ contributes to its unique flavor/aroma composition. Selinene is a low volatility compound that imparts distinct citrus character directly into finished beer and can be found in fruits such as Calamondin Oranges and Yuzu Fruit. In addition to Alora’s™ unique oil composition is the elevated amount of thiol precursors, or more specifically, bound 3MH thiols found in Alora™. 3MH thiols are desired for their aroma/flavor contribution into finished beer. 3MH thiols are responsible for tropical fruit, passion fruit, and citrusy aroma/flavor. Alora™ contains 5X the amount of 3MH precursor thiols than that of Cascade (amount may vary from crop year to crop year).

Amarillo Hops - Pellets (US)
The Amarillo variety was discovered by Virgil Gamache Farms Inc. in one of their hop farms in Washington State and propagated and introduced by them as Amarillo. Unlike most varieties of hops, which may be acquired and propagated by the purchase of rhizomes, Amarillo hops are privately grown only by Virgil Gamache Farms; also the organization holds a trademark on the name "Amarillo" for hops. The resultant aroma is of medium strength and very distinct, described as flowery, spicy and citrus-like with a distinct orange bouquet. The hop is good for flavor and aroma but can also be used for bittering effectively because of the low cohumulone content.

Ariana Hops - Pellets (Germany)
Ariana is a new hop variety from Germany, and it's definitely not typically German! It shows aromas and flavours of black berries, blackcurrant, peach, pear, tropical fruits and resinous. Sounds to us like a great hop to try in your next hop forward beer. Try pairing it with some big new world hops (Citra/Mosaic etc) to increase flavour depth.
AA is usually around 9-13%.

Azacca Hops Pellets (US)
Azacca is another great contender for your latest hazy tropical IPA. Grown in the US, this hop has tropical fruit aromas with a touch of citrus, and on the palate you get spicy, with pineapple, mango and some pine and tangerine. What's not to like?
Azacca comes with fairly high alpha acids of typically 14-16% AA and therefore is great for bittering and flavour/aroma additions including dry hopping.

Cascade (US) Hops - Pellets
Cascade is a variety of hop developed in the USDA breeding program at Oregon State University and released as an American aroma variety in 1971. It originated from an open seed collection in 1956, including English Fuggle, Russian Serebrianker, and an unspecified male hop variety.[2] In addition to appealing flavor qualities, researchers were looking for resistance to downy mildew, a threat to hop farms. Cascade was named after the Cascade mountain range that runs through the states of Washington, Oregon and the Canadian province of British Columbia. The hop variety was first used commercially in 1976 by the New Albion Brewing Company, which established it as a signature hop for American pale ale.
Characteristics A visual characteristic of the plant is its dark green elongated cones which contain moderate to somewhat high amounts of alpha acids compared to many other hop types. The plant is grown in various places around the United States of America, British Columbia Canada, Argentina and in Tasmania Australia.
Use in brewing The resultant aroma is of medium strength and very distinct. It has a pleasant, flowery and spicy, citrus-like quality with a slight grapefruit characteristic. The hop is good for both flavor and aroma uses. It can also be used for bittering effectively, and can be used to make any ales, and indeed is characteristic of American Pale Ales; used in some Lagers.

Centennial Hops - Pellets (US)
Centennial is an aroma-type cultivar, bred in 1974 and released in 1990. The genetic composition is 3/4 Brewers Gold, 3/32 Fuggle, 1/16 East Kent Golding, 1/32 Bavarian and 1/16 unknown.
A relatively new hop on the market, this hop used to be called CFJ90. Described by some as a "Super Cascade" and we tend to agree, but it's not nearly as "citrusy". Some even use it for aroma as well as bittering. Bitterness is quite clean and can have floral notes depending on the boil time. (alpha acid: 9.5-11.5% / beta acid: 4.0-5.0%)

Chinook (US) Hops - Pellets
Chinook is a bittering variety with aroma characteristics released in May, 1985. It was bred by crossing a Petham Golding with the USDA 63012 male.
A high alpha acid hop with a wonderful herbal, almost smoky character when used as an aromatic during the last few minutes of the boil when dry hopping. Excellent for hopping American-style Pale Ales, especially those brewed to higher gravities. (alpha acid: 12.0-14.0% / beta acid: 3.0-4.0%)

Citra Hops - Pellets (US)
Citra Brand is a registered trademark for a special aroma hop variety developed by the Hop Breeding Company. It was released in 2007. Citra Brand hops have fairly high alpha acids and total oil contents with a low percentage of cohumulone content. Citra Brand hops imparts interesting citrus and tropical fruit characters to beer.

Columbus Hops - Pellets (US)
A high yielding, high alpha acid American bittering hop. One of the "Three Cs" along with Cascade and Centennial. Like the others it is citrusy and slightly woody. Columbus has a very high amount of total oils, and can impart a 'resiny' quality to a beer.
Columbus is also known by the trade name Tomahawk, and is part of the group of almost identical sister varieties known as CTZ for Columbus, Tomahawk and Zeus. We purchase whichever of these three is currently available, and they are all interchangable with each other.
Substitutes for bittering: Nugget, Chinook. Substitutes for aroma and flavor: Cascade, Centennial.

East Kent Goldings Hops - Pellets (UK)
Goldings are a group of traditional and very popular English aroma hops grown prior to 1790. They are called East Kent Goldings if grown in East Kent, Kent Goldings if grown in mid-Kent, and Goldings if grown elsewhere in the U.K. There are many different named cultivars such as Amon's Early Bird, Cobbs, Bramling, Canterbury, Petham Rodmersham and in Worcestershire - Mathon. They tend to have a smooth, sweet flavour. Most types of Goldings will work in place of another (Whitbread Golding Variety for East Kent Goldings, e.g.). Note that Styrian Goldings are not of this family, but are more similar to Fuggle.

Freestyle Kohia Nelson Hops - Pellets (NZ)
Kohia Nelson is Freestyle Hop's botanical blend which extends their love of the unique flavours of New Zealand grown crops. They have been experimenting with a process to add botanicals to hops to produce a uniform pellet that has something really unexpected to it.
Their latest version of that blend combines Nelson Sauvin and Rakau with New Zealand passionfruit. The passion fruit was sourced from a brilliant NZ restaurant supply company. Kohia Nelson requires a bit of a different (and complex) production process. The passion fruit is dried, the seeds removed and then blended with the hops prior to pelleting. The only other ingredient used to make the blend is a small amount of natural ascorbic acid (vitamin C from citrus) to prevent oxidation of the passion fruit during the pelleting process.
The internal dry hop testing has come back really positive. It is found to have a potent sweet passion fruit aroma, but (in the test West Coast IPA) a nice crisp, dry, mega-hoppy flavour. We think you will be stoked on it!

So what's in it?
Mega Terps is a custom blend of Southern Cross, Motueka and Rakau designed to provide the highest levels of supporting terpenes and esters, then combined with Phantasm's patented thiol precursors. These lots were selected for having the highest levels of linalool, geraniol, citronellol and 2MIB along with high levels of cysteine bound 3SH. Blended with full spectrum precursor rich lots of Marlborough Sauvignon Blanc derived Phantasm, this is a hot side targeted addition for maximising tropical aroma intensity.

Freestyle Nelson Sauvin Hops (Bliss Process) - Pellets (NZ)
Freestyle Nelson Bliss - The latest experiment out of the Freestyle Hop Research Lab
During 2023 and 2024 Freestyle Hops conducted some Nelson Sauvin field trials , experimenting with alternative harvest and processing methods to explore what can be achieved from moving outside of traditional methods of harvesting and by being brave enough to do things a little differently. They had some really interesting results in 2023 with small trials and have done some much larger scale experiments during 2024.
This is called our "Bliss process" which has the goal of capturing as much of the tropical intensity of Nelson Sauvin as possible without losing the brighter citrus and wine-y notes from earlier harvested Nelson. This process change experiment is aimed at maximising the free thiols (sweet tropical characters) that are most prominent in a super late harvest Nelson Sauvin lot without losing some of the terpene-driven brightness which typically would happen in those types of lots. The 2024 Nelson Bliss tries to thread the needle and get the huge tropical sweetness while maintaining a balanced and brighter character.
This Nelson Sauvin lot has field aromas of Mango, Red Grapefruit, Lychee.

Freestyle Peacharine Hops - Pellets (NZ)
Peacharine is a new advanced selection from Freestyle Hop's breeding programme.
Freestyle's Peacharine has a rich peach/nectarine character with an appealing citrus backbone. In the background are hints of sweet fruit, lime zest and indistinct floral notes. They are still exploring the flavour/aroma spectrum of this new varietal, but their mid to late harvest lots are not likely to ever leave the lineup. Peacharine can easily captivate in a single hop beer, but also pairs well with a wide range of both thiol and terpene heavy varietals, like later harvested NZ Cascade.
Freestyle Super Sauvin Hops - Pellets (NZ)
Super Sauvin is an exciting new blend born out of a collab with thiol-related research collaborators at Phantasm where they created a thiol enriched blend of thiol precursor laden Phantasm, combined with Nelson Sauvin that has high concentrations of cysteine bound 3SH precursors, bound 3S4MP precursors and terpene alcohols.
Super Sauvin is intended for whirlpool use and/or active fermentation dry hopping with thiolized yeast strains. This blend looks like, and should be used in the same manner as, a normal T-90 hop pellet. We recommend whirlpool dosage rates from 4 g/L upwards depending on style and yeast strain. Phantasm is incorporated into the hops prior to pelleting and we’ve created a homogenous blended pellet. Super Sauvin is intended to provide a wider array of thiol precursor compounds than is available from Phantasm alone. While we aren’t yet able to test for the full array of these thiol precursors, we know that bound 3S4MP and 3SO are present in addition to the bound 3SH from Phantasm.
Super Sauvin is a further manifestation of our boundless love of the unique flavours of New Zealand and is a fun project with our close friends and thiol-related research collaborators at Phantasm. Galaxy Hops - Pellets (AU)
Galaxy is often described as having a passion fruity character along with aromas and flavors of clean citrus and peach. It may also carry threads of pineapple and tropical fruit. In short, its characteristics are all fruit with no floral, pine, or spice.
Flavour and Aroma are very intense, a perfect hop for tropical fruit forward pale ales, perfect hop for a NEIPA.

Green Bullet (NZ) Hops - Pellets
Breeding: Released from the New Zealand DSIR (now HortResearch) in 1972 this triploid Alpha Variety was bred by open cross-pollination of the New Zealand “Smoothcone” variety. The era was one where Alpha potential was rapidly being recognised by brewers and the New Zealand Alpha varieties were certainly pushing the boundaries.
Selection: Selection can be confusing with New Zealand Bitter types due to aromatic qualities not usually associated with alpha varieties. The Green Bullet has quite high Alpha while it also produces reasonably high levels of oil that complement and balance the very traditional resinous hop character. An excellent bittering variety that is grower friendly due to its yield and late season maturity.
Brewer’s notes: Although a new variety in relative terms, Green Bullet delivers a very real, traditional bittering quality and hop flavour. A flagship within the New Zealand brewing industry this hop has contributed to several International Brewing Industry Awards. Considered a bittering variety typically for Lager, Green Bullet also carries a solid Styrian characteristic of subtle spiciness which finds it at home in a freshly drawn pint of Bitter or an Irish-style Dry Stout. “utility brewhouse workhorse”
Applications: Used extensively as a utility brewhouse workhorse and found in several brewing locations internationally. A multi award winner and New Zealand pedigree that is well suited to premium lagers in the mainstream, and works well when included with finishing varieties such as Fuggle and Willamette.

Motueka Hops - Pellets (NZ)
Breeding: A triploid aroma type developed by New Zealand’s HortResearch. This hop was bred by crossing a New Zealand breeding selection (2/3) with Saazer parentage (1/3). First selected by a notable Belgian brewery lead to this variety being called Belgian Saaz and later shortened to “B” Saaz so as not confuse country of origin.
Selection: First impressions are a very lively and lifted lemon and lime followed by a background of tropical fruit. This variety displays similarities to its Saazer parent through its levels of Farnesene typically around the 12 % mark however the higher alpha also makes this hop more desirable in dual purpose applications. It imparts a balanced bitterness as well as a desirable new world “noble” type aroma.
Brewer’s notes: An excellent hop in many applications from first kettle additions through to late gift. This hop offers a unique aroma and flavour making it suitable for producing bigger more traditional style Lagers, especially Bohemian Pilsener. Excellent when employed in multiple additions from a single hop bill and sits well on the palate to balance speciality malt sweetness. An excellent variety for Belgian Ales and gives a real edge to Cask Bitter.
A “Noble” Prize Winner
Applications: Typically employed in traditional Pilsener styles this Saazer cultivar has also found application in many traditional European and English Ales styles as well. The weight of oil to alpha integrates it fully with higher gravity types and will counter both malt sweetness and body.

NZH-109 is a triploid selection crossed in 2015 through NZ Hop's partnership programme with Plant & Food Research. It is a medium to late maturing selection, with a moderate yield potential and was fast tracked into advanced trials based on its outstanding flavour and aroma in pilot brewing trials.

Nelson Sauvin Hops - Pellets (NZ)
Breeding: A triploid variety bred from New Zealand variety “Smoothcone” and a selected New Zealand male. Developed at New Zealand HortResearch and released in 2000. The essential oil profile displays “fresh crushed gooseberries” a descriptor often used for the grape variety Sauvignon Blanc, giving rise to this variety’s name.
Selection: Described during selection as “breathtaking” Nelson Sauvin™ has the unique ability to impart a distinctive cool climate white wine “fruitiness”. The complexity of the oils profile has seen selectors stretched looking for descriptors to document this unique new world variety.
Brewer’s notes: A hop that requires judicious application in the brew house, this truly unique dual-purpose variety can be used to produce big punchy Ales as well as subtle yet bitter Lagers. The fruitiness may be a little overpowering for the un-initiated, however those with a penchant for bold hop character will find several applications for this true brewer's hop.
“Quintessentially New Zealand”
Applications: Very much at home in the new-world styles such as American Pale Ale and Super Premiums. This hop is considered by some as extreme and certainly makes it presence felt in speciality craft and seasonal beers gaining an international reputation.

Pacific Gem Hops - Pellets (NZ)
Breeding: A Triploid Alpha type bred from the New Zealand variety “Smoothcone” crossed with Californian Late Cluster x Fuggle. Developed through the hop breeding programme of the New Zealand Horticultural Research Centre known now as HortResearch and released in 1987.
Selection: Does not carry the punchy aromas usually associated with higher Alpha hops. Pacific Gem contains a good balance of oils which constantly contributes to its aroma score. A very pleasing hop with useful bittering potential with Alpha Acids at 13 % and above.
Brewer’s notes: Pacific Gem fills the brew house with enticing aromas during kettle addition and has been described as producing oaken flavours with a distinct blackberry aroma. Typically used as a first hop addition and makes its presence felt through an excellent tempered bitterness and flavour. Well suited to a wide range of beer styles and lends itself well to European Lager styles of various bitterness levels.

Pacific Jade Hops - Pellets (NZ)
Breeding: Triploid Alpha type developed by the cross of the NZ variety "First Choice" (a relative of the Late Cluster) and an “Old Line” Saazer Male. Released from the New Zealand Hop Research Programme by HortResearch Centre Riwaka in 2004.
Selection: This variety is a recent release out of the New Zealand Hop Research Programme selected on its average alpha of 12-14% with Cohumulone in the region of 24% and an excellent oils profile. The aroma of this hop is described as “bold” as it delivers a herbal infusion of fresh citrus and crushed black pepper. Brewing trials have illustrated Pacific Jade™ as an excellent hop that delivers a pleasing soft bitterness matched to desirable aroma characteristics.
Brewer’s notes: Suited for use as a bittering hop with some excellent results also being seen in dual purpose applications, with a soft bitterness attributable to the low cohumulone. The citrus aroma and flavour notes work well to temper malt sweetness in “fullish” Ales especially when used moderately as a finishing hop. Pacific Jade™ is also well suited to balance dryer Lager styles when employed as an “up-front” kettle addition to showcase its bittering qualities.

Pacifica Hops - Pellets (NZ)
Breeding: A triploid aroma type developed through the HortResearch, New Zealand Hop Breeding programme. This cultivar was bred through the open pollination of the highly regarded Hallertauer Mittlefrüh variety. Pacifica was released on completion of successful brewing trials in 1994.
Selection: Pacifica displays classic Hallertau citrus and floral aroma character which selectors mark as a real standout. The aroma is supported by a generous oils profile making selection possible for several beer styles from this stylish hop.
Brewer’s notes: The Pacifica™ brings something of a blend of new and old-world taste descriptors to the brewers' forum. Orange marmalade aptly describes the citrus aroma notes achieved through late addition. Bittering quality is such that early kettle additions net a soft yet solid finish even in highly bittered beers.

Applications: Finds application where a higher oil concentration and proportion of Linalool are required to impact on how the hop character integrates into the final product. Perle Hops (Germany) - Pellets
Perle is German in origin. Bred there from Northern Brewer and 63/5/27M in 1978, Perle has its parent's minty, pine character as well as the spicy, earthy notes found in other noble hop varieties.
A dual-purpose hop, Perle falls in the high-middle alpha acid range. Though originating in Germany, Perle is now also grown in the United States and Belgium.

Riwaka Hops - Pellets (NZ)
A unique aroma hop with a powerfully fuelled tropical passion fruit character.
Breeding: A triploid aroma type bred during the development of New Zealand hops “hops with a difference” programme. Motueka (formerly B Saaz) also came out of this plant-breeding strategy through crossing “Old Line” Saazer with specially developed New Zealand breeding selections. Released by HortResearch Riwaka Hop Research Centre in 1997.
Selection: The Riwaka is a real standout during selection especially when “rubbing up” the freshly kilned cones for aroma scores. Its powerful grapefruit “citrus” characters are literally breathtaking. This variety is typically seen to have higher then average oil, almost double that of its Saazer parent.
Brewer’s notes: If you want to say “hops” in your beer then this variety says it all. The pure weight of the oil character experienced during selection carries right through to the glass. A punchy addition to the new-world styles of Pale Ale and regional Pilseners. A cult hero that is established in the New Zealand craft beer culture.

Saphir Hops - Pellets (Germany)
Saphir bears mild pleasant spice with citrus, fruity overtones (tangerine, red berries). Mild and approachable in the “noble hop” sense, it is an aroma hop that is typically used in late boil additions including dry hopping.

Simcoe Hops - Pellets
Simcoe is used almost to obsession in varying ales, predominantly by American Craft Brewers. Its parents are unknown but is compared to Cascade Hops. Simcoe is described as both fruity and an herbal piney earthy fragrance. The myrcene oil content is a skyrocketing 60.0%-65.0% which is among the highest. It is sometimes described as being "like cascade, but more bitter - and with pine." This hop must be considered if you want to brew an American hop monster.

Southern Cross Hops - Pellets (NZ)
Breeding: A triploid cross between the New Zealand variety “Smoothcone” and a 1950s' research variety bred from a crossing of an early North American type known as the “Cali” (short for Californian) with the ubiquitous English Fuggle. Released from New Zealand’s HortResearch hop breeding programme at Riwaka in 1994.
Selection: The aroma is characterised by a heady mix of lemon peel and pine needles layered beneath the clean spiciness which typifies this New Zealand alpha selection. The Southern Cross has an excellent essential oil profile and low Cohumulone while producing consistent levels of Alpha acid.
Brewer’s notes: Used for first addition bittering this hop has no pretence at substitution for noble type. A kettle variety of the highest order Southern Cross imparts a soft bitterness with a subtle resinous quality. The essential oil component is such that it can deliver a delicate balance of citrus and spice when added toward the end of boil. Generally selected for its consistency in mainstream Lagers this hop has also ventured into the craft market as a reliable Brewpub mainstay.

Applications: High Alpha Acids and Total Oil matched with low Cohumulone find this extraordinary hop several applications, single or dual-purpose. Difficult to list a substitute as there is really nothing quite like the New Zealand Southern Cross available on the world market.

Strata Hops - Pellets (US)
Strata is a super exciting new hop and has blown away commercial brewers in the states with it's uniqueness and complexity. It's been described to show layers of different fruit flavors, dried and fresh, anchored with a dried chili-cannabis-funk. Late hop side additions bring out layers of tropical and bright-fresh fruit flavors; dry hopping yields more grapefruit and cannabis. No, you can't smoke it.

Styrian Golding Hops - Pellets (Slovenia)
Styrian Golding is a hop variety with a confusing name because it doesn’t come from a Golding at all, but rather a Fuggle and has Fuggle-like characteristics. It was a major hops crop in the 1930s in its native Styria (in Austria on the Slovenia border), and has survived due to its tolerance to mildew which helped it to hold its own amid other varieties. It is now world-renowned and in high demand. It is a lovely aroma hop with high humulene and moderate myrcene and carophyllene. Even its farnesene, although low, makes its imprint on the aroma.

Taiheke Hops - Pellets (NZ)
This hop's origins stem from an early US breeding program circa 1956 and was the first commercially bred hop to emerge from the USDA-ARS program when released in 1972. It was bred from crossing an English Fuggle with a male selection believed to have been a crossing of Fuggle with the Russian variety Serebrianka. The NZ-grown version is now known as Taiheke® after being referred to as NZ Cascade.
Selection: During selection this hop displays quite exceptional levels of citrus moving more toward grapefruit characteristics. Similarities exist between New Zealand grown and USA grown Cascade, however agronomics and what vintners describe “terroir” does impact in what many selectors describe as positive for the New Zealand type. Bright colour and tight compact cone shape give it instant appeal and the power of its resinous mix on the senses makes it a real standout during selection.
Brewer’s notes: Performs well when used as a single variety across multiple kettle additions or when singled out as a late gift. Can do some really great things for the hop advocate when matched up with some of the New Zealand aroma heavy weights such as Motueka or Riwaka. A fun hop in the brewery which literally sighs with pleasure when plunged into a hop back. “A bold hop that makes a statement”

Talus Hops - Pellets (US)
Talus™, previously known as HBC 692, is a variety from the Hop Breeding Company, which is a joint venture between John I. Haas and Yakima Chief Ranches. It is the result of a hybrid pollination of the Sabro™ and open pollination.
The aroma of Talus™ has been described as "intense flavors of citrus, flowers, and wood... with grapefruit, stone fruit, oak, coconut, and pine." The pine stands out as a great way to make the best Pacific Northwest IPA.

Tettnang Hops - Pellets (Germany)
Tettnanger is also a name for Swiss, US and Australian varieties as well, but the foreign breeds are mixed with Fuggle and not considered a true Tettnanger. The true Tettnang Tettnanger is grown only around its native village of Tettnang in Germany. It is considered a noble aroma hop and has been compared to both Hallertauer and Saazer, but Tettnanger has notably more farnesene content than Hallertauer. They carry a distinct floral and spicy aroma, and, despite the low alpha acids (up to 5%), they are considered to have a balanced “hoppy flavor.”

Vic Secret™ was introduced in 2013. Anticipate flavors and aromatics of clean pineapple and passionfruit , with subtle notes of pine and herbs lingering in the background. Wakatu Hops - Pellets (NZ)
Wakatu (aka Hallertau Aroma) is a New Zealand hop with a lot going for it! An alpha to beta acids ratio of 1:1, along with low cohumulone, are accompanied by nicely balanced oils which give this an understated floral aroma atop fresh lime. Alpha acids average 9%, so it makes for an outstanding dual-use hop. It can be added at any stage of the process from first wort to dry hopping. It has also been noted for its flavor stability. The cultivar is 2/3 Hallertauer Mittelfrüher and 1/3 New Zealand male.

Willamette Hops - Pellets (US)
Popular American development in 1976 of the English Fuggle. Named for the Willamette Valley, an important hop-growing area. It has a character similar to Fuggle, but is more fruity and has some floral notes. Used in British and American ales. A recent taste-test comparison between Ahtanum and Willamette has described some similarity between the varieties.

Zythos Hops - Pellets (US)
Actually a blend of American hops, specifically designed by Hop Union for American Pale Ale (APA) and India Pale Ale (IPA) style beers. Reportedly a blend of Simcoe, Citra, Palisade and Amarillo, it has distinct tropical (pineapple) and citrus tones, with slight pine characteristics.
